2 tablespoons fresh dill, chopped
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
Sea salt and black pepper to taste

Step 1 – Cook the Potatoes

Place the potatoes in a large pot of salted water and bring to a boil. Cook until fork tender, about 12–15 minutes. Drain well and allow them to cool slightly.

Step 2 – Prepare the Dressing

In a large mixing bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, dill, parsley, salt, and black pepper until smooth and creamy.

Step 3 – Combine

Add the cooked potatoes, celery, and red onion to the dressing. Gently toss until every potato is evenly coated.

Step 4 – Chill

Refrigerate for at least one hour before serving to allow the flavors to blend together.

Step 5 – Serve

Garnish with additional fresh dill and a light sprinkle of paprika if desired. Serve chilled alongside grilled meats, burgers, seafood, or your favorite summer cookout dishes.
